Ingredients

  • 60 ml 2 fl oz London dry gin

  • 30 ml 1 fl oz freshly squeezed lime juice

  • 15 ml 1/2 fl oz raspberry syrup

  • top up top up Ginger beer

  • 5-6 5-6 Raspberries

  • Ice cubes

  • Cocktail shaker
  • Strainer
  • Jigger
  • Bar spoon
  • Rock glass

Instructions

  • Add ice cubes to your cocktail shaker.
  • Measure and pour the London dry gin, freshly squeezed lime juice, and raspberry syrup into the shaker.
  • Seal the shaker and shake vigorously for about 15 seconds until the mixture is well-chilled.
  • Using the strainer, pour the mixture into a rock glass filled with fresh ice.
  • Pour chilled ginger beer over the mixture to top off the drink.
  • Garnish with a few fresh raspberries for a pop of color and added flavor.

Notes

  • To make raspberry syrup, simmer equal parts fresh raspberries, sugar, and water until the sugar dissolves. Strain out the solids and let the syrup cool before using.
