Ingredients

  • For the Tom & Jerry Batter (makes about 12 servings):
  • 6 6 fresh eggs

  • 500 g 2 1/2 cup sugar

  • 4 Tablespoons 4 tbsp butter

  • 1 teaspoon 1 tsp vanilla extract

  • 1 teaspoon 1 tsp ground cinnamon

  • 1/2 teaspoon 1/2 tsp ground cloves

  • 1/2 teaspoon 1/2 tsp ground nutmeg

  • 1/2 teaspoon 1/2 tsp ground allspice

  • For Each Cocktail:
  • 30 ml 1 fl oz dark rum

  • 30 ml 1 fl oz cognac or brandy

  • 2 tablespoons 2 tablespoons Tom & Jerry batter

  • 120 ml 4 fl oz hot milk

  • Freshly grated nutmeg for garnish

  • Mixing bowls

Instructions

  • Separate the eggs, placing the whites in a large mixing bowl and the yolks in a medium bowl.
  • Beat the egg whites with an electric mixer until stiff peaks form – the mixture should be firm enough that it doesn’t slide when the bowl is tilted.
  • In the separate bowl, beat the egg yolks until they become lighter in color and slightly thickened.
  • Add the softened butter and sugar to the yolks and beat until the mixture becomes creamy and well incorporated.
  • Mix in the vanilla extract and all the spices to the egg yolk mixture until fully combined.
  • Gently fold the beaten egg whites into the spiced yolk mixture using a rubber spatula, maintaining as much air in the mixture as possible.
  • For each cocktail, warm a Tom & Jerry mug by filling it with hot water, then emptying it.
  • Add the batter to the warmed mug.
  • Pour in the rum and cognac or brandy.
  • Top with hot milk or water, stirring gently to combine until frothy.
  • Garnish with freshly grated nutmeg and serve immediately.

Notes

  • The batter can be stored in an airtight container in the refrigerator for up to 1 week. Let it come to room temperature before using, and stir gently to recombine if it separates.
  • For a non-alcoholic version, simply omit the spirits and use hot milk or a combination of milk and hot water.
