Ingredients
25 ml 6/7 fl oz Butterfly pea flower infused gin
25 ml 6/7 fl oz St. Germain elderflower liqueur
15 ml 1/2 fl oz Sugar cane syrup
25 ml 6/7 fl oz Lemon juice
20 ml 2/3 fl oz Egg whites

Instructions
- Add butterfly pea flower infused gin, St. Germain elderflower liqueur, sugar cane syrup, lemon juice, and egg whites to your cocktail shaker without ice.
- Secure the shaker’s lid and shake vigorously for 10-15 seconds to combine and froth the egg whites (this is called a dry shake).
- Open the shaker, fill it halfway with ice, and shake again for an additional 10-15 seconds to chill the cocktail.
- Remove the shaker’s lid and strain the cocktail into your coupe or martini glass using a Hawthorne strainer or fine mesh strainer.
- Serve and enjoy.
Notes
- To make butterfly peaflower infused gin at home, combine 1 tablespoon of dried buterrfly pea flowers with 1 cup (240 ml) of gin in a jar. Seal the jar and allow it to infuse for 6-12 hours, or until the gin reaches your desired color. Strain the gin through a fine mesh strainer or coffee filter to remove the flowers, and store the infused gin in a sealed bottle at room temperature.
