Ingredients

  • 4 4 Fresh strawberries

  • 15 ml 1/2 fl oz Simple syrup

  • 120 ml 4 fl oz Sparkling wine (Prosecco)

  • 5 ml 1/6 fl oz Lemon juice

  • Fine mesh strainer
  • Bar spoon
  • Champagne glass

Instructions

  • Wash and hull the strawberries. Blend them into a smooth puree using a blender or food processor. For a silky texture, strain the puree through a fine mesh strainer to remove seeds.
  • In a mixing glass or directly in the flute, combine the strawberry puree with the simple syrup and lemon juice (if using). Stir well to ensure the flavors blend.
  • Slowly pour the chilled Prosecco into the flute. Tilt the glass to prevent excessive foam and preserve the carbonation.
  • Use a bar spoon to gently combine the layers without losing too many bubbles.
  • Garnish with a fresh strawberry slice on the rim or a sprig of mint for added visual appeal. Serve immediately.
