Ingredients

  • 60 ml 2 fl oz Scotch whiskey

  • 22.5 ml 3/4 fl oz fresh lemon juice

  • 15 ml 1/2 fl oz simple syrup

  • 15 ml 1/2 fl oz egg white (about half an egg white)

  • Ice cubes

  • 1 dash 1 dash Angostura bitters (Optional)

  • 1 1 Lemon twist or cherry for garnish (Optional)

Equipment

  • Cocktail shaker
  • Jigger
  • Strainer
  • Citrus press
  • Old Fashioned glass

Instructions

  • Using a jigger, add Scotch whiskey, fresh lemon juice, simple syrup, egg white and a dash of Angostura bitters and pour it into the shaker
  • Shake the ingredients without ice for about 10 seconds to emulsify the egg white.
  • Add ice to the shaker and shake vigorously for about 15 seconds, or until the mixture is well chilled.
  • Use a strainer to pour the mixture into a Old Fashioned glass filled with fresh ice.
  • Garnish with a lemon twist or a cherry if desired.

Notes

  • If you prefer a sweeter drink, you can increase the amount of simple syrup slightly, but be cautious not to overpower the drink.
  • If you’re concerned about using raw egg white, you can use pasteurized egg whites available in cartons at most grocery stores.
