Ingredients

  • 60 ml 2 fl oz gin

  • 15 ml 1/2 fl oz fresh lemon juice

  • 15 ml 1/2 fl oz fresh lime juice

  • 30 ml 1 fl oz simple syrup

  • 60 ml 2 fl oz heavy cream

  • 1 1 egg white

  • 3 drops 3 drops orange flower water

  • Soda water, to top off

  • Ice

Instructions

  • In a cocktail shaker, add gin, lemon juice, lime juice, simple syrup, heavy cream, egg white, and orange flower water.
  • Without ice, shake the ingredients vigorously for about 1 minute to start creating the foamy texture.
  • Add ice to the shaker and shake again for 2-3 minutes (or up to 5 minutes for the classic fluffy texture). This helps chill and further aerate the mixture.
  • Strain the mixture into a chilled highball glass without ice. Let it settle for a few seconds, then slowly top with soda water to create a thick, foamy head that rises above the rim of the glass.
  • Gently stir with a long spoon to blend the soda and base. Serve immediately to keep the frothy texture.

Notes

  • For the best results, perform a longer dry shake if possible to get the maximum foam. If you don’t want to shake it for so long, you can use a small electric whisk for a few seconds after the dry shake to create that creamy, silky head more easily.
