Ingredients

  • 4 4 prickly pears

  • 4 4 lemons

  • 1 l 4 cup cold water

  • 100 g 1/2 cup sugar (or honey/agave syrup)

  • Ice

Instructions

  • Prepare the Prickly Pears
  • Wear gloves to avoid tiny spines from the fruit.
  • Slice off both ends of each prickly pear.
  • Make a lengthwise slit in the skin and peel it back to reveal the flesh.
  • Chop the flesh into chunks and discard the skin.
  • Blend and Strain
  • Add the prickly pear chunks to a blender.
  • Blend until smooth.
  • Pour the mixture through a fine mesh strainer into a bowl to remove seeds.
  • Mix the Lemonade
  • In a large pitcher, combine the prickly pear juice, fresh lemon juice, and sugar.
  • Stir well until the sugar dissolves.
  • Add the cold water and mix thoroughly.
  • Adjust sweetness by adding more sugar or honey if needed.
