Ingredients

  • 10 10 fresh mint leaves

  • 1 tablespoon 1 tablespoon white sugar

  • 1/2 1/2 lime

  • 45 ml 1 1/2 fl oz white rum

  • 30 ml 1 fl oz fresh pineapple juice

  • 60 ml 2 oz club soda

  • 1 tablespoon 1 tablespoon chopped fresh pineapple

  • Ice cubes

Equipment

  • Highball glass
  • Muddler
  • Jigger
  • Bar spoon

Instructions

  • Place the mint leaves and sugar in the bottom of your highball glass.
  • Add the lime wedges and muddle gently to release the lime juice and mint oils. (Don’t over-muddle the mint as it can become bitter.)
  • Add the chopped pineapple pieces and lightly muddle again.
  • Fill the glass about 2/3 full with ice cubes.
  • Pour in the white rum and pineapple juice.
  • Top with club soda and stir gently with a bar spoon to combine all ingredients.
  • Garnish with a sprig of fresh mint and a small wedge of pineapple.

Notes

  • When muddling the mint, press gently to release the oils without tearing the leaves, which can make your cocktail taste bitter.
