Ingredients

  • 40 ml 1 1/3 fl oz Cognac

  • 10 ml 1/3 fl oz fresh lemon juice

  • 20 ml 2/3 fl oz simple syrup

  • 90 ml 3 fl oz chilled Champagne or sparkling wine

  • Lemon twist, for garnish

Instructions

  • Fill your cocktail shaker with ice.
  • Add Cognac, fresh lemon juice, and simple syrup to the shaker.
  • Shake well for about 10-15 seconds to combine and chill the ingredients.
  • Strain the mixture into a chilled Champagne flute.
  • Top up the glass with chilled Champagne.
  • Gently stir to combine the ingredients.
  • Add a lemon twist, for garnish.

  • When choosing the Cognac for your French 125 cocktail, opt for a VS (Very Special) or VSOP (Very Superior Old Pale) quality. These designations indicate that the Cognac has been aged for a minimum of two or four years, respectively, resulting in a smoother and more refined flavor profile that will complement the other ingredients in the cocktail. Avoid using very expensive or aged Cognacs, such as XO (Extra Old), as their complex flavors may be overpowered by the lemon juice and simple syrup. Save those premium Cognacs for sipping neat or on the rocks to fully appreciate their unique characteristics.
