Ingredients

  • 60 ml 2 fl oz dark rum, preferably Gosling’s Black Seal

  • 120 ml 4 fl oz ginger beer

  • 15 ml 1/2 fl oz fresh lime juice

  • Lime wedge for garnish

  • Ice cubes

Equipment

  • Highball glass
  • Jigger
  • Bar spoon
  • Citrus press

Instructions

  • Fill your highball glass with ice cubes to the rim. Pour the ginger beer slowly to maintain carbonation, filling about two-thirds of the glass.
  • Add the fresh lime juice directly into the glass. The acidity balances the rum’s richness and ginger beer’s spice.
  • Float the rum on top by pouring it slowly over the back of a bar spoon held just above the ginger beer surface. This creates the signature layered “stormy sky” appearance.
  • Garnish with a lime wedge on the rim. Squeeze it gently into the drink before stirring to incorporate all flavors.

Notes

  • Rum selection matters significantly. Gosling’s Black Seal remains the gold standard, offering caramel and vanilla notes that complement ginger beer perfectly. Mount Gay XO provides an oakier alternative, while Myers’s Original adds molasses intensity. Avoid white or spiced rums as they lack the necessary depth.
