Ingredients

  • 60 ml 2 fl oz gin

  • 22.5 ml 3/4 fl oz fresh lemon juice

  • 22.5 ml 3/4 fl oz raspberry syrup

  • 1 1 fresh egg white

  • Fresh raspberries for garnish (optional)

  • Cocktail Shaker
  • Hawthorne strainer
  • Jigger
  • Fine mesh strainer
  • Coupe glass

Instructions

  • Dry shake first: Add the gin, lemon juice, raspberry syrup, and egg white to your cocktail shaker without ice. Seal tightly and shake vigorously for about 15 seconds to create a good foam.
  • Add ice and shake again: Open the shaker, add ice, and shake again for another 15-20 seconds until well-chilled.
  • Double strain: Pour the cocktail through both a Hawthorne strainer and a fine mesh strainer into a chilled coupe glass. This double-straining technique ensures a silky smooth texture without ice chips.
  • Garnish: Place a few fresh raspberries on top or on a cocktail pick as a garnish.

Notes

  • For the best foam, make sure your egg white is fresh and at room temperature. If you’re concerned about raw egg, you can substitute with 15 ml (½ oz) of aquafaba (the liquid from canned chickpeas), which creates a similar foam without using eggs.
