Pineapple Upside Down Cake Cocktail Recipe

This cocktail captures the warm, caramelized flavors of pineapple upside down cake in liquid form. Vanilla vodka provides the cake base, pineapple juice brings tropical sweetness, and a splash of grenadine mimics those classic maraschino cherries. The result is a dessert drink that’s surprisingly balanced and dangerously easy to sip.

Ingredients

  • 45 ml 1 2/3 fl oz vanilla vodka

  • 30 ml 6/7 fl oz amaretto

  • 90 ml 2 7/8 fl oz pineapple juice

  • 15 ml 1/2 fl oz fresh lime juice

  • 7.5 ml 1/3 fl oz grenadine

  • Ice cubes

  • Maraschino cherry (for garnish)

  • Pineapple wedge (for garnish, optional)

Equipment

  • Cocktail Shaker
  • Jigger
  • Hawthorne strainer
  • Bar spoon
  • Rock glass

Instructions

  • Fill your cocktail shaker with ice cubes. The more ice you use, the better the dilution and chill.
  • Add the vanilla vodka, amaretto, pineapple juice, and lime juice to the shaker. Do not add the grenadine yet.
  • Shake vigorously for 12 to 15 seconds until the shaker feels icy cold to the touch. This properly chills and integrates all the ingredients.
  • Fill your serving glass with fresh ice if using a rocks glass, or leave empty if using a coupe glass. Strain the cocktail into the glass.
  • Using a bar spoon, slowly drizzle the grenadine into the drink. It will sink to the bottom, creating a red layer that mimics the cherries in an upside down cake.
  • Drop a maraschino cherry into the glass and add a pineapple wedge to the rim if desired. Serve immediately.
