Ingredients

  • 5 2 cup fresh ripe strawberries

  • 22,5 ml 3/4 fl oz fresh lime juice

  • 15 ml 1/2 fl oz simple syrup

  • 15 ml 1/2 fl oz strawberry puree

  • 60 ml 2 fl oz cold soda water (optional, for a lighter texture)

  • 1 1 strawberry and lime wheel for garnish

  • Fine mesh strainer
  • Hawthorne strainer
  • Jigger
  • Muddler
  • Saucepan
  • Coupe glass

Instructions

  • First, prepare the strawberry puree: Hull and quarter 2 strawberries, add to a small saucepan with 1 Tablespoon water and 1 teaspoon sugar. Simmer for 2-3 minutes until soft, then cool and strain.
  • Hull and quarter the remaining strawberries and place them in the cocktail shaker.
  • Add the simple syrup to the shaker and gently muddle the strawberries to release their juice and flavor.
  • Add the fresh lime juice and the cooled strawberry puree to the shaker.
  • Fill the shaker two-thirds full with ice cubes.
  • Shake vigorously for 15-20 seconds until the outside of the shaker becomes frosty.
  • Double-strain into a chilled coupe or martini glass to remove strawberry seeds and ice shards.
  • Top with cold soda water for a light effervescence.
  • Garnish with a small strawberry slice and lime wheel on the rim.

Notes

  • The strawberry puree adds depth and concentrated flavor without making the drink too thick. If you prefer a sweeter drink, adjust the simple syrup.
