Ingredients

  • 3 3 ripe strawberries

  • 10 10 fresh mint leaves

  • 2 tablespoons 2 tbsp fresh lime juice

  • 1 tablespoon 1 tablespoon simple syrup

  • 60 ml 2 fl oz white rum

  • Soda water, to top

  • Crushed ice

Instructions

  • Place the sliced strawberries, mint leaves, lime juice, and simple syrup (or sugar) into the bottom of your serving glass.
  • Gently muddle the ingredients until the strawberries release their juice and the mint becomes aromatic, but avoid over-muddling the mint as it can become bitter.
  • Fill the glass two-thirds with crushed ice.
  • Pour the rum over the ice.
  • Stir gently with a bar spoon to combine all ingredients.
  • Top with soda water to fill the glass.
  • Garnish with a strawberry slice and mint sprig.

Notes

  • For the best flavor, choose ripe, fragrant strawberries. During off-season, you can use frozen strawberries (thawed) but the texture will differ slightly.
