Ingredients

45 ml 1 1/2 fl oz Tequila

15 ml 1/2 fl oz Fresh lime juice
-
30 ml 1 fl oz Apple cider
-
15 ml 1/2 fl oz Honey syrup
-
10 ml 1/3 fl oz Smoked elderflower cordial

L ime wheel or wedge, for garnish

Instructions
- Fill your highball glass or copper mug with ice to chill it while you prepare the drink.
- Place the mint leaves in the cocktail shaker and gently muddle them using the muddler. This will release the oils and fragrance of the mint.
- Add the tequila and fresh lime juice to the shaker filled with muddled mint. Fill with ice, and shake well for about 15 seconds.
- Strain the mixture into your prepared glass over fresh ice.
- Top off with ginger beer, and gently stir to combine.
- Garnish with a lime wheel or wedge, and a sprig of mint for an extra refreshing touch.
