Ingredients

  • 5 5 fresh strawberries

  • 10 ml 1/3 fl oz simple syrup

  • 90 ml 3 fl oz Prosecco or sparkling wine

  • Ice cubes

  • Fine mesh strainer
  • Champagne glass
  • Jigger
  • Bar spoon

Instructions

  • Hull the strawberries, then blend them until smooth. If you don’t have a blender, you can muddle the strawberries thoroughly in a mixing glass.
  • Pour the strawberry purée through a fine strainer to remove any seeds and pulp, leaving a smooth liquid.
  • Add simple syrup to the purée, adjusting the sweetness to taste. Stir well.
  • Pour the strawberry purée into a chilled Champagne flute.
  • Slowly top up with Prosecco, pouring gently to maintain the bubbles. Stir very gently with a bar spoon to mix.
  • Garnish with a small strawberry on the rim or a basil leaf, if desired, and enjoy immediately.

Notes

  • For a deeper flavor, use fresh, ripe strawberries at room temperature, as they’ll be easier to blend and release more natural sweetness.
