  • 60 ml 2 fl oz Aperol

  • 30 ml 1 fl oz gin

  • 22.5 ml 3/4 fl oz fresh lemon juice

  • 15 ml 1/2 fl oz simple syrup

  • 1 1 egg white

  • Ice Cubes

  • Coupe glass
  • Fine mesh strainer

Instructions

  • Add Aperol, gin, fresh lemon juice, simple syrup, and the egg white to the shaker, without ice.
  • Shake the ingredients vigorously for about 15 seconds to emulsify the egg white and create a smooth, frothy texture.
  • Open the shaker, add ice, and shake for another 15 seconds until the mixture is well-chilled.
  • Double strain the mixture into a chilled coupe glass, using a fine mesh strainer to catch any ice shards and ensure a smooth pour.
  • Garnish with a lemon twist or a thin orange slice for added citrus aroma.
