  • 60 ml 2 fl oz aged rum

  • 30 ml 1 fl oz freshly squeezed orange juice

  • 22.5 ml 3/4 fl oz freshly squeezed lime juice

  • 15 ml 1/2 fl oz sugar syrup

  • 1 1 egg white

  • Ice cubes

  • Lime wheel or orange peel

  • Hawthorne strainer
  • Fine mesh strainer
  • Rocks glass
  • Citrus press

Instructions

  • Add the rum, orange juice, lime juice, sugar syrup, and egg white to a cocktail shaker. Shake vigorously without ice for about 10 seconds to create a frothy texture.
  • Open the shaker, add ice cubes, and shake again for 10-15 seconds until chilled.
  • Strain the cocktail through both a Hawthorne strainer and a fine mesh strainer into a rocks glass filled with fresh ice.
  • Finish with a lime wheel or a twist of orange peel.
