90ml3fl ozchilled Champagne or sparkling wine
Lemon twist, for garnish

Instructions
Fill your cocktail shaker with ice.
Add Cognac, fresh lemon juice, and simple syrup to the shaker.
Shake well for about 10-15 seconds to combine and chill the ingredients.
Strain the mixture into a chilled Champagne flute.
Top up the glass with chilled Champagne.
Gently stir to combine the ingredients.
Add a lemon twist, for garnish.
